Yes, you would set them up as two events, and then sell them as a package. If you do that, you would make the events either Private or Semi-Private, so that they do not show up on your full events listing.

Creating a package would issue a separate ticket for each of the two days. Each ticket will be scannable only for each specific day. That way, you can track attendance for each day and each attendee separately.
